Watermelon Daiquiri

If this cocktail isn’t the epitome of warm weather, I don’t know what is. There’s nothing better than the perfect watermelon — one that’s perfectly sweet and juicy. If you find one during the in-season months, and you’re up for the task, it’s the perfect opportunity to make watermelon ice cubes to accompany your daiquiri.

Ingredients:

  • ½ oz agave syrup

  • ½ oz lime juice

  • 2 oz watermelon juice

  • 1½ oz white rum

  • watermelon purée ice cubes

  • garnish: Tajin rim + dehydrated lime wheel

Directions:

  1. Do ahead the morning of (or night before): Cut watermelon into chunks and blend in a food processor or blender until smooth. Fine strain liquid through a fine mesh sieve and freeze the pulp into cubes. It’s best to use a silicone ice tray. Reserve remaining watermelon juice and refrigerate.

  2. Rim a tall glass with Tajin. You’ll do this by sprinkling some of the Tajin on a plate, and running a lime wedge along the rim of the glass. Press the rim of the glass into the Tajin. Set aside.

  3. In a cocktail shaker, add agave, lime juice, watermelon juice, and white rum. Shake until chilled, for approximately 20-30 seconds.

  4. Strain contents of shaker into rimmed glass over the watermelon cubes.

  5. Garnish with dehydrated lime wheel.
