Rhubarb Perfect Lady

The traditional Perfect Lady is a British cocktail that dates all the way back to the 1930s, and has made a come back recently with the rising popularity of gin. The original recipe uses peach liqueur (or peach schnapps), so I thought it would be really fun to do a rhubarb twist on this classic.

Ingredients:

  • 2-3 dashes rhubarb bitters

  • ¾ oz lemon juice

  • ¾ oz rhubarb liqueur

  • 2 oz gin

  • 1 egg white

  • garnish: dehydrated lemon wheel

Directions:

Combine bitters, lemon juice, rhubarb liqueur, and gin into a cocktail shaker. Add ice and shake vigorously for approximately thirty seconds, until chilled. Remove ice, add egg white, and shake again. Double strain into a coupe glass. Garnish with a dehydrated lemon wheel.
