Honey Pear Margarita

This cocktail might encapsulate all of my favorite flavors bundled into one 😮‍💨 and the pear purée is actually so much easier to make than ya think, and you don’t even have to wait for your pears to ripen!

Ingredients:

  • 1½ oz sage pear purée

  • juice of 1 lime

  • ¾ oz habanero honey syrup (you can also use hot honey and dilute it a bit to make it a syrup)

  • 1 oz triple sec

  • 2 oz tequila blanco

Directions:

Add pear purée, lime juice, honey syrup, triple sec, and tequila into a cocktail shaker and shake with a lot of ice. Double strain into a rocks glass over fresh ice and garnish with a sage sprig (bonus points if ya torch it!).


SAGE PEAR PURÉE

  • 2 pears, peeled & roughly chopped

  • 2 sage sprigs

  • 1 tbsp lemon juice

  • 1 tbsp honey

  • approx ½ cup water

Prepare your pears and add all of the ingredients into a medium sauce pan. Bring to medium heat, and allow pears to soften completely. If water reduces completely, be sure to keep stirring, and add a bit more water to keep moist.
Remove sage sprigs and discard. Blend everything until you’ve reached a desired consistency! You might want to add more water at this step.
Store in the refrigerator for up to 5 days.


HABANERO HONEY SYRUP

  • ½ habanero, sliced

  • ½ cup honey

  • ½ cup water

Combine honey, water, and habanero into a medium sauce pan and bring to a simmer. Once honey is dissolved and the mixture is smooth, remove from heat and let the spice steep while the syrup cools completely (about 30 minutes to an hour). Once cooled, strain out the habanero and transfer syrup into an airtight container. Store in the refrigerator for 3 weeks.
