Coconut Miso Old Fashioned

This one goes out to all my umami lovers! But really, I wanted to give an example of how you can get creative with fat-washing (especially for vegans/vegetarians!)

Ingredients:

  • ¾ oz simple syrup

  • 3-6 dashes aromatic bitters (I used @woodfordreserve)

  • 2 dashes orange bitters

  • 2½ oz toasted coconut miso bourbon

  • garnish: zest of orange peel + toasted coconut shaving

Directions:

Add ingredients into a cocktail mixing glass. Add ice and stir for approximately thirty seconds (dilution is key to perfecting this cocktail!). Strain into a rocks glass over a large ice cube. Zest the orange peel, discard, and garnish with a toasted coconut shaving.


TOASTED COCONUT MISO BOURBON:

  • ~ 2 tbsp virgin coconut oil

  • ~ 2 tbsp coconut shavings

  • ~ 1 tbsp white miso paste

  • ~ 3 cups bourbon

Toast the coconut shavings in the coconut oil in a small sauce pan until golden (medium heat). Add miso and stir until melted and combined. Add to a jar with bourbon and freeze overnight. Strain through cheesecloth over a fine mesh sieve into a clean jar.
