Strawberry Shrub Mocktail

I love making shrubs for mocktails (or even cocktails!) because they’re full of flavor, acidity, and sooo versatile. Shrubs are crafted by blending water, fruit (occasionally complemented by other botanicals), sugar, and vinegar, resulting in a tangy syrup that infuses drinks with a lovely range of flavors and complexity.

Ingredients:

• 2 cups cleaned & chopped strawberries

• 1 cup sugar

• ¾ cup water

• ¾ cup apple cider vinegar

Directions:

Prepare fruit and combine sugar, water, vinegar, and fruit into a sauce pot. Bring to a quick boil and reduce to a simmer for approximately 10 minutes. Let cool completely and strain out the solids.

To build the mocktail, get creative! Add 1½ oz of the prepared shrub, some citrus, and top with either ginger beer or soda water. If you’re feelin’ funky with it add about 1½ to 2 oz of your fave liquor!
