Grilled Peach Smash

Ya know when the sun’s about to start setting and it’s still warm out, and you got a good playlist? Looo and behold the grilled peach bourbon smash — a true porch sipper!

Ingredients:

• ¾ oz thyme honey syrup

• fresh thyme sprigs

• glazed + grilled peaches

• 1 oz lemon juice

• 2 oz bourbon

• garnish: glazed peach slice + thyme sprig

Directions:

  1. Slice the peaches into slices and glaze with thyme honey syrup and place them on a grill or a hot cast iron skillet (to get a good char). Set aside to cool for a minute, and then add 2 of the slices to a cocktail shaker.

  2. Add thyme honey syrup, lemon juice, and few thyme sprigs, and muddle. Add lemon juice and bourbon, along with ice, and give it a good shake.

  3. Strain into a rocks glass over crushed ice and garnish with glazed peach slice/thyme sprig.

THYME HONEY SYRUP

Add ¾ cup honey and ½ cup hot water to a sauce pot along with a healthy handful of thyme sprigs and bring to a simmer (be careful not to boil). Remove from heat and let cool completely while the thyme flavors steep. Strain out the thyme and store in an airtight container in the fridge (should last about a month).
