Spicy Pineapple Margarita

The ELITE margarita in my opinion: it’s hot. It’s velvety. It’s tropical. It’s strong. It’s… The spicy pineapple margarita. And it really doesn’t get much better than this.

Ingredients:

  • 2-3 jalapeño slices

  • 1 oz lime juice

  • ¼ oz agave (optional: just for added sweetness!)

  • 2 oz pineapple juice

  • ¾ oz Cointreau

  • 2 oz tequila

  • 1 egg white (optional)

  • garnish: Tajin, pineapple leaves, jalapeño slice

Directions:

  1. Run a lime wedge along the rim of a rocks glass and coat with Tajin. Set aside.

  2. Combine jalapeño slices, lime juice, and agave (if using) into a cocktail shaker and muddle.

  3. Add pineapple juice, cointreau, tequila, ice, and shake vigorously for approximately thirty seconds, until chilled.

  4. Once chilled, remove ice, add egg white, and shake again — vigorously, until a frothy head forms.

  5. Strain into rimmed rocks glass over fresh ice. Garnish with pineapple leaves and a jalapeño slice.
