Peach Gin Mojito

A mojito is one of the easiest cocktails to riff on! With the addition of fresh fruit, or changing up the base spirit, you’ve elevated this classic cocktail into something totally new and totally YOURS. You know I’m always looking for an excuse to watch the magic of Empress Gin happen.

Ingredients:

  • ¾ oz peach purée

  • ½ oz simple syrup

  • ¾ oz lime juice

  • 10 mint leaves

  • 2 oz gin

  • sparkling water

  • garnish: mint sprig

Directions:

  1. To make peach purée, simply blend frozen (or fresh!) peaches with a splash of water at a time until you reach a velvety consistency.

  2. Combine purée, syrup, lime juice, mint leaves, and gin into a cocktail shaker. Add a good amount of ice and shake until chilled.

  3. Add additional mint leaves to a tall glass (don’t forget to slap them to express the oils!).

  4. Double strain over fresh ice and top with club soda.

  5. Garnish with a mint sprig.
