Homemade Limoncello

I’ll be real with y’all—this is the first time I’ve ever made limoncello! I know there are several methods and ways to make it, but I am pretty thrilled with how this turned out! It’s perfectly sweet, not bitter at all, and it definitely doesn’t have that unfortunate lemon cleaning product flavor.

Ingredients:

  • rinds of 8 organic lemon peels (washed)

  • 1 cup white sugar

  • 1 cup water

  • (1) 750ml bottle of overproof vodka (I used 151 proof)

Directions:

  1. Carefully peel the 8 lemons with a y-peeler. Be mindful not to include too much of the pith (the white part), as it can result in bitterness.

  2. Add all ingredients to a clean, airtight glass jar.

  3. Allow to sit in a cool, dry place for at least thirty days.

  4. After the limoncello has sat, strain it through a fine mesh sieve with a few layers of cheesecloth.

  5. Filter the limoncello a second time through a fine mesh sieve and a damp coffee filter.

  6. Pour filtered limoncello into a clean glass jar and store in the freezer.

  7. Serve extremely chilled.
