Clarified Tomato Martini

This clarified tomato martini is such a fun little experiment that’ll put you into your mad scientist era! It’s packed with acidity and umami and has a really unique flavor.

Ingredients:

  • 1 oz cherry tomato juice

  • ½ oz simple syrup

  • ½ oz lemon juice

  • 4 drops white balsamic vinegar

  • 2 oz vodka

  • 2 cracks black pepper

  • 1 oz whole milk

  • garnish: half of a cherry tomato + olive oil

Directions:

  1. Muddle cherry tomatoes and strain through a sieve to collect the juice.

  2. Add tomato juice, simple syrup, lemon juice, vinegar, vodka, and black pepper to a jar and shake to combine.

  3. Slowly pour whole milk into the jar (do not shake!) and let the mixture sit in the fridge for about an hour or two, until milk curds form. Do not disturb the mixture!

  4. Pour over a sieve lined with cheesecloth. Stir with ice and strain into a coupe glass.

  5. Garnish with a half of a cherry tomato and a few drops of good quality olive oil.
