Bee's Knees

The Bee’s Knees is thought to have been created during the Prohibition era, when something called bathtub gin (yes, it was what it sounds like!) was all the rage — which was probably incredibly harsh. So, they added lots of honey to mellow out the intenseness. Nowadays it’s a commonly known cocktail that you can probably order anywhere. It’s pungent, yet pleasant.

Ingredients:

  • ½ oz honey syrup

  • 1 oz lemon juice

  • 2 oz gin

  • garnish: lemon twist

Directions:

Combine honey syrup, lemon juice, and gin into a cocktail shaker. Add ice and shake vigorously for approximately thirty seconds, until chilled. Double strain into a coupe glass. Garnish with a lemon twist.


HONEY SYRUP

Ingredients:

  • ½ cup honey

  • ½ cup water

Directions:

Combine honey and water into a medium sauce pan and bring to a simmer. Once honey is dissolved and the syrup is even, remove from heat. Once cooled, transfer syrup into an airtight container.  Store in the refrigerator for about 1 month.
